



Meet Erin
Erin Grace is a sweet, kind, loving college athlete who has to deal with some food allergies. She is also very dedicated and hard working, especially when it comes to her school work, and we couldn’t be more proud. As sweet as she is, our other kids know better than to mess with her (I think they may even be scared of her!). Chris says that as a toddler she would give the “death glare” when things weren’t going her way, but I don’t believe it.
Erin has always marched to the beat of her own drum. When our family first came together, Erin was only 7 years old. She would always be wearing some type of mismatched apparel that she picked out herself and carrying a bag filled with everything she needed, except her sneakers, of course. She has had a tiara for every birthday (as she should) including her most recent 21st.
When Chris and I made the decision to go plant-based, Erin was right there with us. And with her strong determination in anything she is passionate about, I knew she would be successful. It was a challenge for her to find meals when she went away to college, especially because she has allergies including seeds and tree nuts.
Between field hockey and pursuing a nursing degree, there is little time for meal prep. But Erin lives on things like soup, rice & beans, pasta, and she is a regular customer at Chipotle. She thought that she was allergic to chickpeas because she had a reaction to hummus. It wasn’t until recently that her sister Kerry pointed out that hummus is made with tahini (sesame) and what a glorious day that was! Erin is now a chickpea fanatic!
